Today I want to share with you my version of Empanadas. Empanadas are usually fried but I like to bake mine to cut down on the calories. I also like to use ready made biscuit dough to cut down on the prep time.
This recipe is so easy but tastes like you’ve been in the kitchen for hours.
I like to use buttermilk biscuit dough because I find it gives the best size and texture. I also use left over chicken usually rotisserie.
- 2 packages of buttermilk biscuit dough
- 4 ounces cream cheese
- 8 ounces cheddar cheese
- 3 cups cooked shredded chicken
- Hot sauce (optional)
preheat oven to 350º
- Roll out biscuit dough
- In a bowl combine cream cheese,cheddar cheese,chicken and hot sauce (optional).
- Fill dough with about 2 tbsp of the chicken mixture. Fold over and press the edges with a fork to seal.
- Bake 15-20 minutes.
